Ingredients

  • 200g pitted dates
  • 250g peanut butter
  • 85g honey
  • 120g whey protein powder
  • 100g almond flour
  • 30g chia seeds
  • 75g mixed nuts
  • 60g chocolate chips
  • pinch of salt
  • water as necessary for texture (approx 30-50ml)

Recipe

  • Line an 8x8 Pyrex dish with parchment paper. Leave enough hanging over to easily remove bars once they’re chilled
  • Add dates, peanut butter, honey, and mixed nuts to food processor. Mix until combined
  • Measure protein powder, almond flour, chia seeds, and salt into a large bowl
  • Add date mixture from food processor into bowl with dry ingredients
  • Mix until combined, adding water as necessary.
  • Press the mixture firmly into the 8x8 pan until it’s evenly distributed.
  • (Optional) Add more chocolate chips on top
  • Let chill in fridge for at least 2 hours.
  • Remove and chop into approximately 12 bars

Store in a tupperware in the fridge. These will last for approximately 2 weeks.
